Soil: clay-limestone soil at 160 meters above sea level. South – western exposure
Climate: Mediterranean, limited rainfalls during the winters; sunny and windy summers
Average age of the vineyard: 30 years
Training system: espaliered bushes. Implantation density of 5000 plants per ha
and production of 35 – 40 quintal.
Harvesting: by hand, in small baskets of 10 kg each and grapes selection in the wine
cellar. Second week of October
Winemaking procedure: maceration at controlled temperature and following
alcoholic maceration at 24° C. The malolactic maceration occurs in small oak vats, where the wine completes its refinement cycle during the following 12 months.
Colour: deep ruby red.
Nose: aroma of sweet spices and small red fruits tending towards preserve.
Palate: soft and with a slightly tannins underscore. Harmonious.
Storage: controlled light, horizontal bottle, constant temperature 17° C and humidity 70%. Serving temperature 16°C.
Food Matches: Red meat, roasts, sausages, cured meats and seasoned or blue cheeses. Wonderful for relaxation.
