I.G.T. (Typical Geographical Indication) Place of origin: Audarya vineyard Soil: clay-limestone soil at about 200 meters above sea level Climate: Mediterranean, mild winters with limited rainfalls; sunny and windy summers. Average age of the vineyard: 20 years Training system: espaliered bushes.
Implantation density of 5000 plants per ha and production of 35 – 40 quintal Raisining: naturally, cutting the fruiting cane on the fruiting wire Harvesting: by hand, in small baskets of 10kg each and grapes selection in the wine cellar. Second week of October Winemaking procedure: maceration on the skins for 36 hours, soft pressing and slow fermentation in stainless steel temperature-controlled vats.
Tasting Notes: Colour: intense golden yellow Nose: dehydrated apricot, wildflower honey and Mediterranean maquis Palate: sweet and well-balanced, with a natural freshness due to the overripe.
Storage: controlled light, horizontal bottle, constant temperature 17° C and humidity 70%. Serving temperature 9-11°C Food Matches: Almond based sweets, pine nut and raisin.
